6 Years Without Mama

October 18th is always a special day. A day to remember my precious, strong, loving, funny, and snuggly mama. If you know me at all, you know her. It's funny right? We hate being like our parents because they drove us bonkers, we fought a lot, naturally because we were the same human. Then one day being told "you are starting to look just like your mama" and "gah, that was something your mom would say" become the very statements that compliment you like no other and keep her memory so alive. 

For those of you who know my moms horrible health story, you know that the day she took her last breath on earth was more like a giant exhale for us because we knew she was no long suffering, no longer feeling stuck in a world where she truly was never meant to belong. She could run and dance and do things she could never dream of doing on earth. Sad? Totally - we no longer got to spend every day with our incredible mommy. But Happy? Of course - she was with her Jesus and there's no better place to be. 

One of my favorite memories of my mom is her total lack of desire to cook. Somehow we are complete opposites in this area of life. Robert and I always joked that mom would never survive feeding us without Campbell's Tomato Soup, because a usual lunch for us was grilled cheese and tomato soup. SO in honor of my mom today, I made a fancier Apple Brie Grilled Cheese for her - way more fitting for her sweet personality!

Sweetness from the fig and apple, oozing melted brie, and buttery toasted bread. Truly no better combo. 

1. Two pieces bread of choice
2. 1-2 oz of brie cheese
3. Thinly sliced apple - enough for one half of bread
4. Fig Jam - approx. 1-2 tbsp depending on size of bread
5. 1 tbsp butter

1. Melt butter in the pan
2. Add the rest of the ingredients to the bread
3. Grill on both sides until lightly toasted and cheese is melting.
