Tropical Green Smoothie

I know what you are all thinking - if it is really going to be this hot, can I just be on a tropical island drinking a fruity little drink? Is it really too much to ask? Well, we can't always get what we want.

Here's the best thing I can offer you -- introducing, the most delicious green smoothie that is so good it will transport you right to Hawaii in your mind I promise. 

I have made quite a few smoothies in my lifetime, but for some reason I have never used a very key item in this smoothie - dates. You may look at a date and think "Why would I ever want that wrinkled giant raisin in my smoothie" but just trust me on this one. They add such sweetness to this smoothie, adding a creamy texture at the same time. 

Most days in Southwest Oklahoma reach anywhere from 100-106 degrees and this smoothie has become a daily staple in our house. My husband wears his full army uniform everyday in this weather (think heavy camo, thick socks, boots + 105 degrees = lots of sweat). This has become his new favorite after work treat! 

All you have to do it combine coconut water, spinach, 1/2 banana, peaches or mango (or both!), and 1-2 pitted dates. Easy as can be!

Ingredients for One Serving:
8 oz coconut Water
2 cups (big handful) Spinach
1/2 fresh or frozen banana
1 cup of frozen peaches or mangoes (or combo)
1-2 pitted dates

Optional:
Top with toasted coconut
Add chia seeds or flax seeds
Add a vanilla protein powder to make a meal

Directions:
1. Blend all of the above ingredients in a blender.
2. Pour into a glass, top with some yummy toppings.
3. ENJOY!
