Strawberry Maple Overnight Oats

I love breakfast. I have always always always been a breakfast person. The girl who cleans up from dinner and already starts thinking about the next meal, and wakes up starving. Coffee in the morning light, avocado toast, fried eggs, all the things! But since I have been eating a little different trying to get my stomach problem under control (read more about this here), I haven't been able to do my usual eggs in the morning. 

So... overnight oats. Raw and easier on my stomach for digestion.

My go to breakfast lately. Easy, tasty, sweet, super healthy and long lasting in my body! Not to mention, since it's prepped days or the night before, all I have to do is pop this out of the fridge and eat! Overnight oats have become a staple for Daniel and me because they are super filling, healthy, and easy peasy! We have so many flavor combos that I will share in the coming weeks!

You get your healthy carbs and fats, fruit, and protein in this meal! Hemp seeds are a great plant based protein that don't change the taste of whatever they are in, but pack added nutrients into the meals.These are my favorite - Hemp Seeds. Ingredients for One:

  1. 1/2 cup gluten free oats
  2. 1/2 cup + of almond milk
  3. 3 tbsp hemp seeds
  4. 1/2 tbsp - 1tbsp pure maple syrup
  5. 6-8 cut strawberries (or any fruit you prefer!)
  6. Optional toppings: nut butter, seeds, more fruit, etc. 


  1. Combine all of the ingredients and soak overnight or up to 1.5 / 2 hours!
  2. Top with desired toppings and enjoy!
